How do I uh... not "break" it?

Hi there. Just recently had Mac OS Ventura running on a 2017 MacBook Air using the steps in this video. Worked great for two(ish?) days, noticed no issues. Last night after work, I put my laptop down. Woke up this morning to get back on for work, noticed my computer had shut itself off (I didn't shut it down when I closed it last night), so I booted it up. I got the error message where there's a file logo with a question mark in the middle of the screen. I restarted it a few times, and if I didn't get the question mark file, I got a "🛇" symbol. Tried to boot up in recovery mode, and had a hell of a hard time reverting to Monterey. Finally was able to recover to Monterey after several tries (I have no idea what I finally did right if I'm being honest.)

Ultimately, I'd really like to get the system running back on Ventura again, but really don't want to go through this nightmare of re-setting the whole device again if something breaks again. Does anyone know why this might've happened? How do I avoid it happening?

I did notice I had a software update pending before I logged off last night... wondering if maybe my mac tried to update itself and that's what broke it? Let me know what y'all think.
