Revert to base macOS version not really working (OpenCore Legacy Patcher).

Hi,

A couple months ago I decided I would try macOS Sequoia on my 2017 MacBook Pro, due to a very unstable system, I decided to revert to the latest supported OS which is Ventura. I followed the guide on GitHub and created a macOS installer, erased my hard drive and installed the new OS. Only problem is it worked fine as long as I stayed on my macOS partition, but if I want to use my Windows partition when I boot, I have to go to the OpenCore EFI (which is still there) to open my windows partition, and when I want to open my macOS partition again, I have no choice but to open it from the OpenCore EFI and I have my macOS Ventura, but it prompts me to update to Sequoia... Is there a way to completely get rid of it ?
