Mac Mini mid 2011: can install Sequoia but Big Sur install never complete. How comes?

Using OCLP I successfully installed Sequoia on my my old mid 2011 but it was too slow for me. Read somewhere that Big Sur is the last OS that is running well with Mac Mini from 2011. So I decided to try it.

Using the last OCLP patcher 2.2.0, install stop during process and never complete.

I'm stock at the step after choosing the hard drive to install. The progress bar open and stop at about 25%.

Any idea how to debug it? Any other patcher? Should I try with an older OCLP patcher?

Any recommendation regarding the latest OS to run well on my hardware? My Mac Mini have 8 GB and I did an SSD upgrade.
