Install onto another disk

Hello everybody! I'm new here

I have a MacBook Pro version 8,1 (early 2011 13"), updated to High Sierra and now I want to install Sonoma. However, I still have the Hitachi Apple HDD, now I want to switch to a Samsung SSD that I own. Is there a way to put everything into the USB without connecting the SSD before (when installing)? Cause I didn't understand if the installer have to put some files in the HDD while installing everything in high sierra. I'm not English native and some parts of the tutorial are not 100% clear for me to be honest. Thank you!
