Organize drives?

Hey y'all! I recently downloaded macos sonoma on my mbp 2011, but also kept high sierra on a different apfs volume. I meant to have 3 drives the HDD that's inside (that shows up ok), and High Sierra and Sonoma, both being on my SSD.

Now i'm STUPID for macos, been on windows all my life, how do i organize this so it looks better?

Normally i wouldn't care but only the High Sierra and HDD drive would show up in finder (only when i booted up sonoma tho)
