MBP 9,2 running Sequoia super laggy

Mid 2012 MBP 13" 2.5GHZ i5 intel 16GB RAM 500GB SSD (OWC Mercury).

I was using Sonoma previously, and while Sonoma when first installed ran much like Sequoia is now, it did seem to improve over time. After reading some reviews on some installs that had similar specs to mine, I took the plunge and installed Sequoia. I started out with 8GB of RAM and I could tell that apps and typing were a tiny bit sluggish. Upgrading to 16GB ram was only $30 or so from OWC so it seemed like a no brainer. Also bought a new battery as well and re applied new thermal paste to the processor. One thing I noticed on the this model is that certain components like the GPU (I think it is at least) don't have any covers on them compared to my previous MBP13" which had metal covers and heat compound on them. Even as I type this, there is about a half second delay in typing and showing words on screen. Frustrating enough to want to downgrade back to Sonoma or earlier.
Are any others experiencing this or know of a good work around to it to remove the lag? Not sure if this helps but I am also using MacFanControl and have it set to keep the CPU from reaching 194F by a custom setting and typing this and watching the header bar I can see that temps are struggling to stay under 194F. Maybe temps are part of the issue? The thermal paste I used is Arctic MX-4.
