MacBook Pro 15" 2011 (AMD; MacBookPro8,2) - 10.14, 10.15, or Big Sur?

I'm trying to update a used 15" MacBook Pro Early 2011 machine to a newer version of macOS using OCLP but most of the info I've found is older and I'm not sure if it's the most up-to-date.

Basically, I'm looking for whatever will be the smoothest experience with as new a version of macOS as I can find. I did successfully install macOS Sonoma with the latest OCLP, but graphics are definitely laggy, and sound doesn't work at all, so I'm trying to install older versions. I had no success creating an installer for macOS Catalina using either OCLP or DosDude's Catalina Patcher (both installers failed with errors about the install drive despite formatting it multiple times).

I also know the AMD graphics cards aren't fully supported but I wasn't sure if that was ever fixed (DosDude's older site says no, OCLP 0.4.2. had an option to include a fix for AMD graphics, but again, couldn't create the installer).

Open to suggestions!
