Looking for Cool Projects Like Hackintosh to Dive Into (Custom ROMs, Ubuntu Touch, iOS KVM, etc.)

What are some other projects like Hackintosh that I can research when I'm bored? For example, custom ROMs, Ubuntu Touch, iOS KVM, and a few others.

Also, I know this is probably impossible, but I was looking into the possibility of a watchOS port for WearOS watches.
