SFF Hackintosh in 2024

Hey guys, I'm completely new to the Hackintosh community.

I'm thinking about building a Hackintosh for my mom, as her 2009 Mac Pro she's using professionally for graphic design work is slowly giving up.

I'm looking for some tips and part recommendations.

Seeing how she's been getting a lot of years out of all her tech, I don't think a new Mac would be good.
With her Mac Pro she could just put in a new graphics card, good luck trying that with a Mac Studio. :)

Also, I think I would have a lot of fun building one, so I don't mind the extra effort.

One catch: she needs dual boot with snow leopard and any reasonably new OSX Version.

I don't know how much more difficult this would make the setup process. I have dabbled with Linux before, So I have *some* OS Tinkering / Unix experience, but not much.

I want to make it extra hard on me by using the small form factor Fractal Design Terra case, as I really like the aesthetic and it would fit in perfectly in her office.

Now, I've been thinking of some first Ideas for specs. The Programs she uses are really CPU and Ram dependent, external gpu is a nice to have, but doesn't have to be too expensive, so this is what I've got so far:

part pick note
cpu i7 12700kf I know I hould go for earlier generations for driver support. But it's hard finding new units and I would like to go with ddr5 RAM if possible. If this is a bad idea, please recommend something else. :)
gpu Radeon RX 6600 xt almost no rendering, video editing or gaming. Should be more than enough.
ram 64gb RAM I could go with fast ddr4 memory if necessary, but preferably ddr5 >=4800mhz
case Fractal design Terra
PSU any modular SFX power Supply I couldn't find a good (trustworthy) psu yet, that's both modular and SFX, as SFX-L won't fit properly....
storage 2x1tb SSDs she has a lot of external storage, so in-system storage doesn't need to be that big. If you have any recommendations how to partition them for dual boot (f.e. one system per drive, or one drive for systems and one just for file storage to make upgrading easier?
motherboard some mini itx board that fits the rest... haven't picked anything because I'm unsure about the cpu
cpu cooling 120mm AIO (EK waterblocks?) I know 120mm AIOs aren't popular, but I feel like it's the best choice for space reasons. Also, cool factor. 👀

Thanks!
