I don't know who needs to hear this, but the new OpenCore 2.0.0 and newer has a toggle in Settings under the Extras section where you can Disable mediaanalysisd service and this completely fixed the issues I was having with my mac locking up after being left on over night.
Tested on a 2010 iMac and 2014 Mac mini with macOS 13, 14, and 15 and the issue is completely resolved with that box checked.
So, if you're having the previous issue with it locking up after being left idle for hours, turn that option on and Build and Install OpenCore again.
