Can't boot into macOS after install

Background: finally had enough with Apple's low performance MacBook Pro 16,1 and tried to make some use of my old hardware.

MB: ASUS X99-A II, bios 1801

CPU: E5-2680V4

GPU: Radeon Pro WX8200(FYI its a Vega based card so should work)

Disk: some Micron SATA SSD, can't recall the exact model

Tried to install macOS 14.6.1 with OpenCore 1.0.1, the installation went okay (though I had to ditch USBInjectAll otherwise installer kernel panics). But I'm not able to boot up the macOS after the installation process - the machine just keeps rebooting it self. I tried to take a few photos of the on-screen logs and it seems things went side ways here

ota-outcome = back_to_original_os ramrod_sync_NVRAM nvram successfully persisted to the filesystem CHECKPOINT_INTERNAL_ERROR(checkpoin_nvram_set): failed to set NVRAM varible ota-outcome=back_to_original_os -356870212xxxxxx ramrod exited with status 1 - rebooting 

I have no idea why the OS is doing OTA on a fresh install, nor do I have any clue what "back_to_original_os" means - that's an empty disk, there is no original os to go back to.

Any ideas, suggestions on what to try next? An older macOS version, 14.5 maybe? Or am I missing some kexts/config options? I'm pretty sure I did everything that dortania told me to.
