Reboot/loop trying to update from Ventura to Sonoma (Ryzen 9 5900X)

Hi,

I have an AMD PC (ASUS ROG B550-F, Ryzen 9 5900x, 64Gb DDR4-3200, 3x 2Tb NVME drive, RX 6800) fully functionnal under Ventura (OpenCore 1.0.1)

It's been 3 days that I try to update to Sonoma but as soon as the installer launch, the PC reboots.

Even if I didn't find anything of interrest in it, here is the last log on the USB stick : Log

If some could help or give a direction, it would be very nice.
