Very new to hackintosh. Please recommend a place to start

I have a Dell XPS 13 7390 with I7 10510u, 16GB ram, 512gb NVME. Currenly have windows and Linux mint installed. I want to hackintosh it and hopefully dual boot with Linux Mint. I currently have a macbook air m1 with 16gb ram as well.

Reason why I want to hackintosh it is because I am trying to downsize because I just also bought a 2024 Rog Zephyrus G14 with an RTX 4070, 8945HS and 32gb ram. So I am looking to sell the Macbook Air M1 and keep the dell as a hackintosh machine. Only reason why I need mac os is I am building an app with Flutter and I need macos to deploy IOS apps. Also, I want linux dual boot as a possible eGPU solution for Machine Learning in the future (or maybe use the new G14 if it's good enough for ML).

Ideally, I want to at least install a hackintosh on the dell and see how it performs, if it's serviceable enough to deploy IOS apps. If it is, then I have a buyer for the M1. If it's too sluggish and whatnot, then I would probably just sell the dell and keep the M1 so that I have macos. I do love the form factor of the XPS 13 over the M1 so hopefully it's serviceable enough. I realize that it might not compare to the M1, especially the battery life. I don't plan to do anything heavy, except for Xcode and VS Code with the Hackintosh.

I did some research and seems like a good place to start is the OpenCore install guide and this github repo for a similar XPS 13 but the repo is for 10710u and I have the 10510u. Both links below:
