New GPU for motherboard Asus P9X79 Pro SandyBridgeE e CPU HexaCore Intel Core i7-3930K SSE v.4.2 AVX v.1 - PCI 3

Hello everyone, I would like to ask for your help.

I would like to create a hackintosh starting from my old PC (Asus P9X79 Pro SandyBridgeE motherboard and HexaCore Intel Core i7-3930K CPU - SSE v.4.2 AVX (I think so version 1) - PCI 3). Currently I have a GeForce Nvidia GTX480 GPU.

Which AMD GPU (used) should I buy to drive 1 UHD monitor and, if possible, two FullHD monitors (I have a third 22" FullHD that I use as a portable monitor, but I think I'd need a second GPU) and have the latest version of OSX?

I don't know if I can keep the GTX480 with opencore in the latest versions of OSX.

I think it's not worth buying a PCI 4 GPU, but in two years (2026) I would like to upgrade the computer with a new motherboard/CPU/RAM. Eventually, I could keep the one I'm buying now as a second graphics card or sell it with all the old components.

I read somewhere that starting from a certain generation AMD GPUs need AVX2 (or something like that) to drive 4K (let alone the fourth monitor), but I can't find that website anymore.
