Installed OCLP from a different Mac

I'm an idiot. I took a poorly Mac Mini 2011 in part exchange for another Windows device I was selling. Replaced the HDD and repasted it. Threw 8GB RAM into it. I went onto a MacBook Air 2017 and created an OCLP Ventura installer. Not realising it would think I was wanting to update the current machine. The install predictably went horrendously.

So I did what I should have done, built a High Sierra installer for the 2011 Mac Mini, which of course installed fine, installed OCLP onto the Mac Mini, with the intent of upgrading it to Ventura. When I opened OCLP, it kicked off and said it had unsupported MacBook Air patches installed, and it prompted me to install the correct ones. I was very confused, because I had formatted the drive with Disk Utility in the High Sierra installer...I tried installing the patch but the device started Kernel Panicking during EFI boot at restart.

I've gone back to High Sierra install, wiped the disk again, and I'm hoping the first time I hallucinated doing a full disk wipe. Any advice on what to do next...? My plan is as I said install High Sierra again, this time with a fully wiped drive, then try upgrade once I'm back on the desktop. Any insight greatly appreciated....
