Installation Issue - Please Help

I have an iMac Retina 5k Late 2017 Model

went through the installation process and everything was going smoothly up until i booted into Opencore EFI Boot , selected "install MacOS ventura", never really saw the text running on the screen, it seemed to install, then rebooted by itself. i assumed it may have been stuck in the reboot loop as descibed, when i tried to do the following as described in the instructions:

If your Mac is looping back into the beginning of the setup after the first reboot, turn it off, start it again and hold Option. This time, select the option with a grey hard disk icon, it can say "macOS Installer" or the name you gave the disk during the installer process. Keep repeating this step after every reboot if necessary.

i realized something fucked up

here is what i see when i boot up:

"windows" or "install macOs ventura" (the Mac HD is no longer showing up)
when i try going through the install macOs ventura option, no disks are selectable, they are greyed out

I opened up disk utility and the existing mac disk is unmounted as disk0s2 and disk1s2, can't mount them or do much with them.

clearly i fucked shit up somewhere, please help, any ideas!?
