HELP NEEDED: How to disable Mac OS updates

I've got in a little trouble. I just sold my Macbook Pro 2012 15", which does not support MacOS Big Sur officially. With Opencore EFI it works fine, hoever it asks for update to Sonoma. Is there ANY way to config Opencore EFI so MacOS would think it's an 2013-2014 model (last that support big sur), so update menu will show something like "you up to date"?

I'm seeking for an EFI solution, because it should work before user is created. Not hosts, terminal etc.

I've tried Sonoma on this mac and it works like crap, so I don't want to sell a ticking bomb that will update forewer and make it worse on each update. On Big Sur it works like a charm, but Catalina is so outdated.

Board ID spoofing does not work, because Opencore "gratefully" enabling that updates, which is incredibly bad in my situation.

Pls somebody help.
