MacPro Early 2009 upgrading to Monterey / Sonoma

Hello,

I'm currently trying to update my MacPro Early 2009 to a newer version of Mac OS. I have no problem making a bootable USB and initializing the setup. However, when trying to update to Monterey the computer finishes the first part of the install where you see x minutes remaining, reboots, continues shows x minutes remaining, reboots, continues, reboots, continues, reboots, continues, reboots, continues and at this point I have decided something is not going right.

The installation does not finish and sure I select the install mac os with the harddisk symbols. I have this problem with Monterey and Sonoma and tried to install the OS on different hard drives.

I'm also trying to do the install on one strip of 8GB ram now. The computer has a Geforce GTX 660 2GB.

Working OS installed is Mojave.

Any advice? Should I try to clean all hard drives completely so there is no longer any OS installed?
