Can I install OCLP/Sonoma to 2012 Mac Mini with TWO separate internal hard drives: one with Catalina and one with Sonoma/OCLP and still boot to either one as I wish?

I am running Sonoma on my 2012 Macbook Pro and would like to move my Mini to Sonoma as well, but the Mini is more crucial to my life/workflow and I would love to put Sonoma on the internal 120GB SSD and leave Catalina on the other disk in case it doesn't work or I need legacy apps. But will the boot situation work the way I want, allowing me to choose which I want to boot into?

I know I can just do a backup and go for it but since I had an empty SSD in there I thought I would ask. I've tried searching but other situations I found were using partitions, not separate drives. Thanks for any help. Sonoma runs on my MBP great BTW (it has 16gb RAM and SSD though, which helps).
