MacOS not using all cores?

This may be a non-problem given on how threads are scheduled, but I'm just trying to understand if everything's working as expected.

I just completed a new build with a i9-13900F (details here https://www.reddit.com/r/hackintosh/comments/1c32lcz/i913900f_rx_6800xt_b760mds3hddr4_dual_boot/) and in MacOS I can indeed see all threads in Activity Monitor. However, it seems that only 8 of them are used for most of applications.

I just tried to export something in iMovie (ok, I know, not the best application to stress the CPU) and it only used a small percentage of the processor.

It is also weird (but the problem could be lying somewhere else) that iStat only sees temperatures for 8 cores

This may have to do something with VirtualSMC.

I tried to launch a benchmark with CineBench and all the cores were stressed, so I guessed they are somehow exposed in MacOS. Is everything configured correctly?
