Open Core boot menu does not contain the INSTALLER app

Hi,

I am building a 'hack' for a friend; so these are the h/w parts that apply:
Gigabyte H470M DS3H
RM750x Power
Core i5 10-600K
Built a thumb drive from the VENTURA install and added the OpenCore EFI based upon 10th gen COMET Lake iMac20,1

Upon choosing the UEFI partition on the next screen is the Open Core Boot Menu; with only 2 choices:
1. ESP
2. UEFI Shell.

I expected to also get a choice to run the VENTURA Installer.

All suggestions are greatly appreciated
