Trying to clone boot drive but I can't erase the destination drive (details inside)

I am booting from an external SSD that I have a new hackintosh set up running off of, but I want to clone from the new boot, to the internal NVME drive and disk utility will not let me erase that destination drive which has my old hackintosh install on it (but is not the one I am booted from).

The error info I'm getting is this:

Deleting APFS Volume “Hackintosh - Data” (disk2s1) Deleting APFS Volume from its APFS Container Unmounting disk2s1 The volume “Hackintosh - Data” on disk2s1 couldn’t be unmounted because it is in use by process 0 (kernel) Couldn’t unmount disk. : (-69888)

Is this maybe just a disk order thing I could fix in the bios? I also have a windows drive on the same machine, so maybe I could format from Windows?

Any suggestions?
