Sonoma / Ventura Install Fails - "An Error Occurred Loading the Update"

I have a MacBook Pro 8,1 (Early 2011 13") with 16GB RAM and the newer Broadcom (wifi/bluetooth) board from the Late 2011 which previously ran as a fusion drive (500GB HDD & 120GB SSD with DVD removed), with Mojave via DosDude1's patcher. I had a partition made just for messing around and got Sonoma working on it albeit very slowly. The OpenCore patcher 1.0 worked first time and Sonoma 14.0 was installed easily in October.

Fast forward to now and I wanted 100% solid state storage and replaced the 500GB HDD with 1TB Crucial SSD, with the 120GB Crucial SSD installed in the optical drive space via a caddy adapter. I CarbonCopyCloned my Mohave partition onto the 1TB SSD and installed the OpenCore into EFI so that worked just fine.

The 120GB drive is my playground now and I wanted to reinstall Sonoma. No matter how I install Sonoma (or Ventura), the macOS installer fails around the 14min mark with the following error.

Operation queue failed with error: Error Domain=com.apple.0SInstallerSetup.error Code=1004 "An error occurred loading the update." UserInfo=(NSLocaLizedDescription-An error occurred loading the update.)

After reading some Apple support discussions on this error where bad RAM was to blame, I ran a full RAM test with Rember (a GUI for Memtest) and it 100% passed.

Also noticed the WiFi doesn't work properly during the installer (see post image), but I'm not certain WiFi worked the very first time i installed Sonoma successfully either. I seemed to think the installer requires a good Internet connection, so I even tried a wired Ethernet connection during the macOS install after verifying successful ping to google in the Terminal.
