Hackintosh worked great until I corrected startup disk in system settings, now it won't boot...

I'm hoping someone might be able to help me out here...

I have a frustrating issue in which I seem to have broken my Hackintosh by making a change to the startup disk in system settings.

I recently did a clean install to update my machine on which I had been running High Sierra for several years. But it was time to update, and I took the opportunity to swap from Clover to Opencore, and had Ventura working really well. The only issue I have encountered with the new install is that it wouldn't always wake from sleep properly, but otherwise I have been using the computer as my work-horse, trouble free, for over a month now.I haven't properly tried to fix the wake from sleep issue yet, but one thing I did do was reset the NvRAM, just in case. This then had the unfortunate effect that in the Opencore bootloader screen, the wrong hard disk was highlighted, and it would always automatically attempt to boot to the wrong disk If I wasn't ready with the mouse. A minor inconvenience that has somehow escalated into a big source of frustration.I went into system settings, and changed the startup disk to the correct one, and restarted the machine. Since then, I have not been able to boot to my newly set up Ventura system. It gets hung up at pretty much the same point everytime and resets itself.

It still works fine if I boot to the old Clover/High Sierra install. Its an Asus Z270 prime, i7-7700K, Intel HD630, all originally built using recommended parts from tonymacx86.

It took me a long time to get my machine set up to my liking, so if anyone has any ideas on what I could do, i'd be much obliged. So far I have replaced my EFI folder with a backup, and that had no effect. Attached is a picture showing how far the boot gets before it restarts.
