GPU upgrade help!

Hope to get your thoughts on this Opencore hackintosh. Currently running the following setup:

-i9-10920x -EVGA x299 micro ATX 2 -Corsair vengeance DDR4 3000 64gb, thinking of switching to G.Skills Trident Z Royal 3600 128gb -AMD WX 4100

Running Catalina

What is the most powerful GPU I can swap for mine without having to change anything in the software? Just plug and play.

I need it for Photoshop, Illustrator, Figma, xD, inDesign and Procreate.

Also, is it safe to update OS? If yes, what is the newest safe version?
