Unable to boot after mounting EFI partition

Hello, I have an iMac (iMac13,2) running MacOS Monterey and ElementaryOS 7 in a dualboot, and due to space issues, I decided to remove eOS, so I used Disk Utility to remove the partition, which, to my surprise, went flawlessly.

I Then had the issue of the GRUB bootloader just kinda, being there. So, I mounted the EFI partition to take care of that. Here the exact set of commands I entered to do such a thing:
mkdir mnt
sudo mount -t msdos /dev/disk0s1 mnt
(Note that I did this while not being booted into the RecoveryOS, I also didn't actually modify anything inside the EFI partition, I mounted it, opened it, then rebooted)

When I was done doing what I needed to do, I rebooted the machine for the changes to take effect, but when I was greeted with the OpenCore boot picker and booted MacOS, I was met with the "No Entry" sign error.

Now I'm stuck wondering what to do, is there anyway I can get my machine to boot again without losing data? Any help is greatly appreciated, thanks!
