After much researching I finally got Monterey 12.6.8 into my Hackintosh. It was much more simpler than I had imagined. What complicated things was the fact that I was upgrading from Mojave. I had my USB mapped via my SSDTs. This unfortunately was causing issues with Monterey.
I used the most recent OpenCore 0.9.4. and only two pre-built SSDTs. I couldn't get it going with manually made versions using SSDTtime. The SSDTs I used were SSDT-EC-USBX-DESKTOP.aml and SSDT-PLUG-DRTNIA.aml. JIC anyone is having similar issues. Everything else was pretty Vanilla using Dortania's guide. While trying to upgrade I couldn't find much info of anyone upgrading to Monterey using my config so I hope this helps people out there.
