OpenCore 0.9.3 with Big Sur? How far can you go with OC updates and old MacOS releases?

Is there a guide to the latest OpenCore release and compatibility with recent but older version of macOS? I need to stay on macOS Big Sur due to compatibility issues with BlueTooth and my hardware. I'm wondering if OpenCore is backwards compatible with older macOS versions. Is there a cutoff as far as compatibility with older releases? I'd like to avoid excessive trial and error as I'm way back on OpenCore 0.7.5 and will not update if later versions of OpenCore break Big Sur stability.
