Keyboard/mouse, rebooting and freezing issue when setting up macos Monterey.

I have gotten an Intel NUC NUC7i5BNH and I am trying to install macOS Monterey with opencore. I have successfully installed macOS 12.6.7 with an offline installer using my MacBook. The keyboard and mouse works in the installer but when it boots into the setup screen, at first the keyboard and mouse didn't work and I found I needed to have VoodooI2C kexts. I have installed them and when it booted up to the setup screen, the mouse worked (not sure about the keyboard) but it would reboot. I removed all the voodoo kexts and just added one at a time. Most of them made the mouse work but it would reboot the system. Finally I found one that didn't reboot the system (VoodooI2CAtmelMXT.kext). Happy me continued the setup. The first problem I had is when interacting with "choose your region", it would crash the system, either rebooting or getting a black screen and coming back but frozen. I decided to just leave it and change it when set up. The other menus had no problem.

Came the "make your profile" menu. When I started typing, the system would just freeze. when booted again I had an idea just to use the on screen keyboard, same problem. I searched reddit and someone had the same problem "setup crashes at network configuration" his solution was to remove "intelmausi.kext". So I removed the kext and changed the config.plist to false as it wouldn't boot at all. when set to false, it would boot but it would only sit on a grey screen (most likely macOS was loading the "how would you connect to the internet" menu and couldn't find either wifi nor Ethernet. that was a bummer.

I have mapped the usb's (I think), I just plugged my Magic Keyboard with a usb-a to lightning to every port on the nuc including the usb-c with a usb-c to lighting cable. i used https://github.com/USBToolBox/tool/releases/tag/0.2 for this.
