Hackintosh big sur installer boots but stays stuck on a blank progress bar (OpenCore)

<a href='/search/label/distro?max-results=12'>Hackintosh</a> <a class='btn-link text-primary' href='/2020/12/install-macos-big-sur-on-supported-pc.html'>Big Sur</a> installer boots but stays stuck on a blank progress bar (<a class='btn btn-link py-0' href='/p/opencore.html?id' target='_blank'>OpenCore</a>)

I did all the UEFI settings that I needed to toggle, and reset the NVRAM
I tried booting into verbose mode to see the issue and it freezes on the error:

ACMKernelService: initValueFromBootArgAliasesUInt32: analytics collection period = 86900 (default)

When I don't log into verbose,

the screen stays like this without any progress: (like this but the progress bar is blank, and never progresses)

random picture I found lol

the config.plist I'm using (preset)
https://github.com/luchina-gabriel/BASE-EFI-INTEL-DESKTOP-3RDGEN-IVY-BRIDGE/blob/main/EFI-Release/OpenCore/config.plist
My CPU: Intel Core i5-3337U CPU @ 1.80hz x 2
RAM: 8Gb
SSD: 1TB
and I know Big Sur works on my system since I managed to use it on a KVM (QEMU)

What do I have to do? I don't wannt mess things up
