Rainbow Snow on Display Port Output (Dual DVI Conversion)

I may be asking too much but I like a challenge.

Running Ventura OpenCore on a Dell with 3 display outs on the SkyLake 530 HD, 1 HDMI and 2 Displayport. 1 of the Displayports seems to not function but I don't need it anyway. On the other DP, I used a USB powered Displayport to Dual DVI converter box (supposed to work on 4k@60) to connect to my Shimian QH270 Korean 2560 x 1440 screen.

I got a picture but it's filled with rainbow snow. Not total static like a handshake error, but snow.

The converter box is HDCP compliant but I'm not sure the QH270 Korean monitor is. Could that be the issue? The HDMI output to my 1080p monitor works crystal clear (even when I also have the Displayport going as a second screen). I don't have an HDMI to Dual DVI converter (does that even exist?) to test that port to the QH270. Pretty sure it's the monitor or the DisplayPort conversion box.

According to these specs my output should work so I'm hoping MAYBE there's a setting I can try on boot?

I'll try and post a pic of the rainbow snow if anyone wants to see it. I'm wondering if rainbow snow means something like handshake, as dropping the resolution down to even the lowest setting doesn't solve the issue.

I will add - At bootup (apple logo) and post, the screen is clear. It's not until the display driver kicks in on the Ventura desktop that the snow starts.
