NUC7i7BNH - Cannot get past the 100% load bar with Apple logo

I am new to the Apple game but recently fell in love with the architecture!

I am trying to load macOS Success' href='/2020/12/install-macos-catalina-on-supported-pc.html'>Catalina on my NUC7i7BNH or NUC10i3FNH. Currently, I am trying the NUC7i7BNH. If you think using the NUC10i3FNH would be better, let me know!
The NUC7i7BNH has the following specs...

• PU: Intel® Core™ i7-7567U Processor
• Graphics: Intel Iris Plus Graphics 650
• INTEL SSD 120GB
• RAM: 8GB x 2 DDR4 2133 MHz
