OpenCore | macOS 12 - Trouble booting into the macOS Installer

Hardware: HP ProDesk 600 G3 DM
CPU: Intel Core i5-7500T
GPU: Intel HD Graphics 630
RAM: Samsung M471A1K43BB1-CRC
Motherboard: Intel Kaby Lake - Q270 chipset
Audio Codec: Conexant Cx20632
Ethernet Card: Intel Ethernet Connection (5) I219-LM
Wifi/BT Card: Intel Dual Band Wireless-AC 8265

So the macOS Installer is refusing to boot and I'm unsure what's causing the problem. Please see the screenshot linked above.
I tried swapping/deleting some Kexts to see if anything changed but the boot keeps hanging on "apfs_module_start...". I've created my own SSDT's with SSDTTime and also tried the pre-build SSDT-EC-USBX instead of my own SSDT-EC and the pre-build SSDT-USBX. Also after every Kexts and SSDT swap I ran ProperTree to update the config.plist with using the OC Snapshot feature.
I also added "npci=0x2000" to my boot args because in the HP BIOS there is no option for Above4G as mentioned here: https://dortania.github.io/OpenCore-Install-Guide/troubleshooting/extended/kernel-issues.html#stuck-on-rtc-pci-configuration-begins-previous-shutdown-hpet-hid-legacy
The HP BIOS is on version "HP P22 Ver. 02.38, 21/04/2021" which is the latest version as of writing. I also changed as many BIOS options possible as listed on the Kaby Lake page of OpenCore.
Any help would be highly appreciated as I spend the entire day on this project only running into it not booting.
