NVMe Issue - Big Sur Install with OpenCore on Laptop

Hello boyzz ! (Sry for the bad spelling, i rarelly write in english)

It's been 3 days now i try to install Big Sur on my laptop following the very good Dortania guide, but im struggling on an issue i cant get ride off:

Hardware:
* CPU: Intel Core i5-9300H
* GPU: Intel UHD Graphics 630 / Nvidia GeForce GTX 1650 (i know the Nvidia card is not compatible, i just want to run with the iGPU).
* RAM: 16 Go DDR4 (2666 MHz)
* Motherboard/Laptop model: Intel HM370 / Asus TUF Gaming (505GT-HN136)
* Audio Codec: DTS Software / Realtek
* Ethernet Card: Gigabit Ethernet Realtek PCIe Gbe Family Controller
* SSD: Micron_2200V_MTFDHBA512TCK

So here is my issue:

When i boot on the USB installer (i got the opencore picker, and can select the USB device without any issue) i have a kernel panic before i reach the macOS's GUI. Something rly strange, is that sometimes (i would say 1 on 20 times) it reach the macOS installer GUI, and then 30sec after it freeze.

Opencore log doesnt rly say much to me (u can find the download link of the log at the end of the thread), i looked on internet with thoses error, but i didnt find anything helpfull for me.

Kernel panic msg is refering to IONVMeController / IONVMeFamily (u can find picture at the end of the thread). I have the last NVMeFix kext and i tried some recommanded boot-args like "-nvmefaspm" but it change nothing. Tried a lot of config.plist modification i found on internet thread related of NVMe issue (like DisableIoMapper = True / Xcpmcfglock / Setupvirtualmap / ForceExitBootService / DisableRtcChecksum ...).

Also tried with or without CtlnaAHCIPort.kext.
I feel like the answer is on the link below, but my knowledge is insufficient to enderstand.

Also did update of bios and all firmware i could.

Done the guide from the start 3 times (with OC 0.7.6 and 0.7.5), and now i rly have no clue of what to try/do.
