GMK NUCBOX2 hackintosh?

Foreword

I recently bought a mini PC called NucBox2 from GMK: https://gmktec.com/products/nucbox2-intel-core-i5-8259u-4k-mini-pc

It has very similar spec to Intel NUC 8 (which there are many reported success of hackintoshing it, and github repositories are available for it's EFI), however this machine is cheaper.

Specs

CPU: Intel Core i5 8279U

GPU: Intel Iris Plus 655

RAM: 2 x 8GB 266mHz DDR4

Storage: AGI High Performance SSD AI198 M.2 PCIe 1TB

Audio Codec: Intel SST

Ethernet Card: Realtek 8111

Wifi/BT Card: Intel Dual Band Wireless-AC 7265

UEFI: Insyde H20 (GMK seems to have slapped a stock UEFI image on the machine, which has many irrelevant options in it: https://imgur.com/a/FraTPNq)

The problem

I am trying to boot Catalina Installation USB with it and was greeted with this error (Black box drawn to protect my face): https://imgur.com/a/3S0HSZQ

apfs_module_start:1689: Load: com.apple.filesystems.apfs, v1412.141.1, apfs-1412.141.1, 2020/08/31

Here is a link to my github repository hosting the EFI I attempted to use: https://github.com/laggykiller/hackintosh-gmk-nucbox2

The EFI I shared was built from scratch, following Dortania's guide for OpenCore. OpenCore is 0.7.5 debug version. I also used https://github.com/zearp/Nucintosh as reference.

For UEFI settings, I have disabled CFG lock, VT-d and secure boot.

Previous experience with Olarila

(To mods: This is for information supplementation. I am not asking for help with Olarila!)

Actually, I have already tried to hackintosh the machine with Olarila image before with limited success. I used Olarila Catallina image (Which uses Clover as bootloader). It installed successfully, but I encountered difficulty in enabling hardware acceleration (If I remove boot argument -igfxvesa, screen enters power saving mode when enter GUI; I know that the computer did not crash as I can use a keyboard to blindly login and hear the fan roar as desktop loads).

Interestingly, if I use my handcrafted EFI, it can recognize the Catalina installer on USB, but not the Olarila MacOS installation on my hard disk.

If I use Olarila's image of Big Sur or Monterey (Which uses OpenCore as bootloader), it boot loops.

From this experience, I know that hackintoshing on the machine is possible, and my UEFI settings should be correct (?)

Summary

Can anyone figure out what's wrong?

The hackintosh community would be blessed with a cheap hackintosh machine if it works!
