Update from Monterey Beta to Monterey

I'm writing about this because it wasn't smooth, I had to do it a couple of times until I figured out what was wrong.

I had the following problem:

When the update starts, it reboots, it does it's update magic but nope, it just goes back straight to Beta after that, update just won't stick.

SOLUTION:

I updated my OpenCore installation and then followed dortania's guide once again in order to create a new valid config.plist & to update the kexts.
