Upgrade strategy for old Clover

HEllo,

since 2019, I am running a hackintosh (never had any single problem) but it is starting to be a little bit outdated with Clover 4920 and Mojave 10.14.6. I am no more able to apply software updates. I would like to upgrade bootloader and switch to BigSur and also later replace for a more recent GPU.

My configuration : Gigabyte Z390 M Gaming, Intel Core I9-9900K 3,6GHz, Sapphire Radeon RX Vega 64 8Go, 2 Samsung 970 EVO Plus 500 Go NVMe (dual boot Win10)

Then I am a little bit lot among the options. Should I upgrade to latest Clover version (but I have not found any documentation for such a version gap) ? Should I switch to OpenCore (but seems not very simple and I am not an expert IT engineer) ? Maybe there is an alternative ?

Any advice are more than welcome :-)
