LGA 1700 12th gen hackintosh? How long before it's stable / is it a good idea to try?

so I'm on a 2012 desktop. I've always wanted a hackintosh mainly for video editing and logic pro.

I'm upgrading my desktop to a i9 12900k when it comes out, what would the compatibility with hackintosh be like with that? I'm half way considering buying a M2 mac book pro when it's announced. BUT, I know the i9 12900k is way more powerful beast of a CPU and cheaper to build lol, I'd love to use final cut pro X and Logic Pro X though.
Are those two programs stable on 11th gen hardware? How long before they're stable on 12th gen? (12th gen is also bringingin DDR5 and PCIE5 lanes lol)
