Big Sur/Catalina installator freeze

I have created offline installators for Big Sur and Catalina (also tried online versions of them). The system is configured with OpenCore manual and booted without any error. But after a few minutes installation was started it just freezes the laptop with no reaction for mouse or keyboard. For Catalina it stucks on "about 10 minutes remaining" and for Big Sur it is "about 16 minutes required".
Spend a few days to figure out the problem, but didn't found solution.
I found that system freezes when the installator tried to unpack a big zip archive or some big package file. No pictures saved.
Has anyone had a similar problem and is there a solution for it?

Used OpenCore of the latest version, all required kexts, NVMeFix, additional kexts for keyboard and mouse. Also tried to install without them. Configuration made with Dortania Guide.
Laptop: Asus VivoBook S14 (S431FL)
CPU: Intel Core i7-10510U (Comet Lake, quad core)
GPU: Intel UHD Graphics 620 / NVIDIA GeForce MX250 (disabled)
SSD: Samsung NVMe MZVLB1T0HALR 1TB, PCIe.
