So I have 2 drives in my hackintosh, the m.2 has Big Sur and the SATA SSD has Windows 10 on it. Now when I attempt to even boot the system with the SATA drive connected I just get black screens forever. Maybe 1 out of 30 times I can actually get to the Gigabyte boot screen to select bios or go straight into OpenCore to select which OS to boot in. If I unplug the SATA SSD with Windows on it then it boots up into OpenCore 10 out of 10 times with zero issues. With both drives plugged in I can't even get into the bios since the screen just stays black when I hit the power button. The fans do the usual spin up fast then spin down to normal, I just never get anything on either one of my monitors. If I hit the power button on my build then it shuts off immediately, I don't have to hold it down for 5 seconds (it immediately shuts off once I hit the button) so I know it's made zero progress booting into any OS with both drives plugged in. Otherwise the system works flawlessly regardless of what OS I'm in when I can actually get it to boot up with the Windows SSD also installed. Again I have zero issues with 1 drive, I can boot into Big Sur and my system works 100%. I feel like this has to be something in the bios I'm missing.
Any suggestions for troubleshooting?

NVMe - Inland Premium m.2 1tb (MacOS)
Sata SSD - Inland Professional 512gb (Windows)
