I have two Samsung 870 EVO SSDs (port 5 and 6 on the motherboard) that are disappearing when I boot into the Big Sur installer. They don't show up in Disk Utility.
When I reboot into High Sierra they remain invisible. I have to literally unplug my box (though NVM reset works sometimes too) to get them back.
I see the following in the OpenCore logs, but I'm not certain if it's relevant:
