"This system was automatically rebooted after panic"

This was taken directly from a Text Log. The link to the same Log is below. Can anyone explain to me how to read the text log so I can learn how to pinpoint the problems as I keep going and troubleshoot myself? I feel like I'm like 90% done if this would just boot and install. Yeah I pulled from a (free) premade opencore package and it still is giving me a runaround. I also included the link to my (newly built) efi folder. The OS is in a hidden partition, I get about to where the apple logo load bar is half done and then it suddenly restarts. Thanks. Also if anyone can link me to the .aml files that they are failing to find that would help too.

Dell Optiplex 7080 Micro is the machine I'm using.

I'm really close to hiring(ie paying for) help at this point.
