Installer returning to "macOS Utilities" screen after selecting drive

Hi there!

I've been trying to set up my Hackintosh for a while now.

I followed the main Dortania guide to configure everything. The OC sanity checker also yielded good results for my config.plist, even though I know it's not completely accurate all of the time.

The system boots up just fine with the USB stick I created by following the guide. However, once I try to install the OS onto a drive it just returns to the "macOS Utilities" screen. Here's what that looks like:

The drive I selected there is already formatted to APFS. However, re-formatting didn't do anything either.

While I have attached the full logs below, here's a photo of the error in the installation log:

This happens in both Catalina and Big Sur. I haven't found anything concerning this specific issue or anything similar yet, so any help would be greatly appreciated.

• Motherboard: MSI X370 Gaming Pro Carbon
• GPU: AMD Radeon RX Vega 64
• Storage: Samsung 850 EVO 250GB (supposed to be for macOS), Samsung 980 1TB (NVME, Ubuntu), Samsung 860 EVO 500GB (Windows 7; yes, CSM is turned off), 2x Seagate BarraCuda Compute 2TB (data drives for Ubuntu and Windows respectively)
• SMBIOS: MacPro7,1

Also: You can see some graphical glitches at the end of the video. I'm not sure if those have anything to do with this main issue, though it'd be great if I could get rid of those as well. So if you've got any tips, I'd love to know them :).
