PC stuck booting OpenCore 0.6.9 from USB

I have Catalina running on this PC but using clover (so I know my hardware combo works) and decided to create a clean OpenCore USB boot to do a clean install of Big Sur but it always gets stuck. I'm getting some APCI errors. Seems to be an APCI error as one of the tables is conflicting but I can't figure out how to fix it.

I built my aml files (EC, PLUG, PMC, HPET) using the SSDTTime and added the pre-built USBX aml (which can't be be made using SSDTTime), added latest required kexts (Lilu,WAG, etc) and EFI drivers. Gone through my config.plist line by line with the guide for coffee lake after opening with ProperTree and using the Clean option.

I've combed over every inch of the Dortania guide (especially the APCI section) and can't find a solution (that works) to get past this.

SMBIOS: 19,1
CPU: Core i5 9600KF (FYI - This variant has no iGPU which works fine with my current Catalina install)
GPU: MSI RX 580
MB: Gigabyte B365M-H
