Installing hackintosh without formatting complete HDD

I have two physical drives in my computer. One physical drive has windows and I don't want to touch it in any way. The other drive is a 1TB HDD which is used for storing data. I want to partition the 1TB HDD into 2 parts for example 800GB and 131GB. Then, I want to install macos on the 131GB partition. The problem is every hackintosh tutorial I watch, it insists on formatting a complete physical drive. Why is that? If I just format the 131GB partition and install on it, is that a problem and why? I have read some articles and this seems possible if the disk is GPT which is the case with me. Both my physical drives are already GPT.

Can I follow the same procedure and just instead of formatting the complete physical drive, format the 131GB partition? If not, why is that and any way to achieve this?
