Finally got Big Sur working on OpenCore after some false starts. Also had no mouse and keyboard initially. I originally installed Catalina on Clover (after OpenCore not working) which worked perfectly but have booted with the OpenCore loader that I used to install Big Sur and Catalina still works. Big thanks to u/LewisStudying for help with the EFI folder when I installed Catalina on this machine. I have sound, Ethernet and WIFI! (Realtek Wireless USB Big Sur Wifi Adapter) all working flawlessly. I still need to do USB mapping for the 15 USB port limit and then I'll have a complete working hackintosh. The only thing I haven't tested is sleep yet, but I see no reason why it shouldn't work.
