I've been successfully installing Big Sur 11.2.3 on my system as the following:

System:

• CPU: Intel i9-10900
• Motherboard: Gigabyte Z590i Aorus Ultra
• RAM: 64GB Corsair Vengeance Pro DDR4-3200
• Storage:
  • ADATA SX8200PNP 512GB

Config:

• Bootloader: OpenCore 0.6.7
• SMBIOS: iMacPro1,1
