Different serial numbers for 2 macOS installation on the same computer - possible?

I have a working Hackintosh with Big Sur installed on it, and it works great.

Now, I would like to use my computer for work, but this requires me to install a stupid management profile (Microsoft InTune) that gives my IT department some access to my computer (nothing really groundbreaking, but I don't like that my computer "rings home" at each startup).

For this purpose, I would like to create 2 completely separate macOS installations, with different serial numbers. I have another SSD so the installation part is not the problem.

So basically my question is -- how can I make OpenCore boot macOS installation #1 with serial number X, but boot macOS installation #2 with serial number #2? Is it even possible?
