Big Sur, OC 0.6.7 Crashing when I'm not looking


I'm having an issue where my Hackintosh is constantly rebooting when I'm not looking. If I step away from it for longer than 20 min, it has rebooted consistently. I have upgraded from Catalina where I didn't have this issue.

I've turn off all power-saving features in the OS and BIOS. So I don't think its that. I've also followed the https://dortania.github.io/OpenCore-Post-Install/universal/sleep.html instructions (even with sleep turned off)

Ive found pretty much nothing OC-related on the error in my searches.

I do get a panic when I log back in:

watchdog timeout: no successful checkins from com.apple.WindowServer in 120 seconds
