Partial success - but randomly crashes - MacOS 10.15.7, Opencore 0.66, i9-10900K, ASUS Z490-CREATOR, RX580

After many years of struggling along running HUGE Logic Pro sessions (and the odd bit of After Effects/Premiere work) on various iterations of MacBook Pro, and really not being able to justify the expenditure on a 'real' Mac Pro, I finally bit the bullet and built a PC for the sole purpose of running OS X! What a delight.

It's certainly been a journey, having had lots of issues even booting to an installer USB (honestly, I still have no idea what the issue was, but we're there now), but now I have a working system which gobbles up Logic sessions with tons of software instruments and other plugins without issue - admittedly I haven't tried anything in After Effects in anger yet, but opening an old project, the RAM preview seems markedly quicker than what I'm used to.

Massive shout out to the excellent Dortania Opencore guide for getting me booting into Catalina within hours, when I was expecting it to be days based on previous experience of a few year ago!

Now for the random crashing part... I initially thought this may be something to do with the GPU, so after trawling the internet and trying various things, including using the integrated graphics, changing the SMC from iMac20,2 to MacPro7,1, enabling/disabling BIOS CPU overclocking and XMP profiles, I'm still having problems with MacOS crashing.

This either happens about 2-3 minutes after booting, or after hours of use, so I don't think it has anything to do with the boot process. Upon crashing, the cursor still moves but the operating system is completely locked up. Interestingly, before I changed my SMC from iMac20,2 to MacPro7,1, a coloured square of visual noise would appear around the cursor, which is what initially led me down the road of thinking it may be a GPU issue. This also seemed to concur with a 'com.apple.DumpGPURestart' error in the console when it locked up.

Alas, after changing the SMC, the issue remains - albeit without the coloured square, and without DumpGPURestart appearing in the log. Below is a copy of the most recent crash report, although they all look similar now and all seem to point to VirtualSMC and/or Lilu being the culprit as in the below.

Might anybody with more experience and knowledge be kind enough to point me in the right direction to continue troubleshooting this? I feel like I'm going round in circles..!
